I had to choke back tears watching this, my father recently passed away, and my mother passed away in 2012 and me and my mother always were in the kitchen together, she taught me how to can, jellies and tomatoes, and all thoes wonderful things, some new people have moved into my family home, ive not been able to go back yet the hurt is still to fresh but i would like to visit one day, thank you for this video, is very heartfelt and lovely hearing your story erin

I have your Book on Pie and LOVE it, but my question is about deep dish pie plates. I got a beautiful Emile Henry pie plate but realized that it’s a deep dish. How do I make your All Buttah dough to compensate for the deeper dish? Thanks so much!
My pie dough recipe is formulated to be sufficient for most 9 inch/23 cm standard depth pans, with plenty of extra scrap dough - or for a 9 inch/23 cm DEEP DISH with almost no scrap dough. That said, this can be a frustrating part of writing pie recipes, because pie pans are really not standardized, so it's possible that my standard recipe won't be sufficient for you. It's possible to increase the recipe to 1.5x the standard recipe (225 g flour + 170 g butter) or even just to double it (300 g / 226 g butter) and save the scrap dough for another project, just to make sure you have plenty to work with for your pan! 💝

This is exactly what I needed. For some reason it never dawned on me to roll the crust up to place it in the pan 🤷🏻♀ (even though I started baking, inspired by you, four years ago! 💗)

For your double crust pie, it did not really look like the top and bottom crusts were sticking together. Would you ever egg wash it? or does it not matter since you're tucking them together anyway? Thanks!
I agree in that one shot it didn’t stick well even when I pinched firmly - it was sticking together better on the other side - and the reason it struggles sometimes is residual flour on the surface. You can try to brush excess flour away which is always helpful, and you definitely could use egg wash. In a situation where I’m not trying to add browning, I typically opt for water as a pie dough “glue” rather than egg wash - it helps the dough adhere without any additional effects! ❤

I love watching you bake! I’m a pretty good pie maker myself, the older I’ve gotten the better I am, I think it’s because I have the time to pamper my pies now that all my children are grown.

I agree with you that pie is the most wonderful of sweets. It has always baffled me why so many people use pre-made pie crusts. I wouldn’t serve that to anyone. I’m so glad you are teaching the younger generation to make good crusts.
I find faster to make your own than a trip to the store! Plus I usually have pie crust dry ingredients blended up & in the freezer so all need to do is add the wet.
I have been making pies for years but only these past few years have I been making the crusts too. There's just so much lore and opinions and "hacks" that i always assumed it was too difficult to bother! It was not until a friend taught me how to do it and watching Erin's pie crust video a hundred times that I was at all confident that it was possible! i hope more people learn earlier than I did that it's not a Huge deal once you know how to do it!

Can you make a video on pre prepping and storing rolled out pie crust. Freezer? Fridge? Both single and double? Is there a better dough for doing this? Better to do raw or baked?
I am currently doing a ton of research on this, but I’ll admit I’ve previously had a lot of trouble freezing pie dough. Can’t wait to report back on what I find out soon! ❤
I blend the butter with flour and salt and freeze that. I also have water and vodka mixed and in fridge so it’s sorta halfway there. Also I roll out the crust for a bottom crust and shape into pan. Then I put in a plastic produce bag and press/suck out all air I can shaping close to dough. Then I put in a pie carrier. I usually can get more than one shell in there, stacking, if I use foil pans. I do this for no more than a week usually around the holidays. That’s about all I can think to do for pre prepping if that helps.
I’ve had your book on pie for a couple years now (and totally love it) and I finally ordered your other books and got them today. I’m so excited I can hardly stand it. I’m starting with “savory baking” …it’s so beautiful and loaded with delicious recipes and lots of tips and tricks…your a fabulous baker Erin…I can’t tell you enough how proud of you I am and so happy I’ve gotten to get to know you through your channel and books.
